Grilled Corn on the Cob with Soy Herb Butter

 Serves:  44 ears corn, husks left on

Soy Herb Butter:

1/2 cup Earth Balance, softened

1 tablespoon or more fresh herbs, minced (basil, chives, oregano, tarragon, thyme, parsley, etc.

Rinse corn, pat dry and then carefully peel back husks to reveal silk.

Remove and discard (or compost) all silk. Smooth the husks back into their original position.

Soak for 20 minutes covered in cold water.

Meanwhile, prepare grill. Grill corn for 20 minutes.

Serve with soy herb butter.

For the Soy Herb Butter combine ingredients including herb or herbs of your choice. Transfer to a small custard dish.
