Makes: 1 crust
1/2 cup nonhydrogenated, nondairy butter, at room temperature or melted
1/4 cup confectioners’ sugar
1 cup unbleached all-purpose flour
½ cup chopped nuts, optional
Preheat the oven to 350 degrees. Cream the butter and confectioners’ sugar with an electric mixer until light and fluffy (or stir together melted butter and sugar).
Add the flour and beat/stir until the dough just comes together. Press the crust mixture into the bottom of an 8- or 9-inch square or round baking dish or pie pan. If using nuts, gently but firmly press into the top surface of the crust.
Bake for about 20 minutes or until lightly browned. Remove crust from the oven and place on a wire rack to cool while you make desired filling.
Note This crust can be flavored with powdered ginger, lemon or orange zest, etc.
