Frozen tomatoes for a slacker like me

Remember last July when we were wondering what to do with all those darn tomatoes?

Tomatoes in salsa.

Tomato salad.

Tomatoes sliced.

Tomatoes for friends.

Tomatoes. Tomatoes.

Tomatoes.

One July morning, I brought in seven tomatoes from the garden. The next, I brought in five more.

Overwhelmed by my bounty, I put a few whole, just-picked tomatoes in a zippered baggie and banished them to the freezer. And, with a bit of a sigh about missing summer, I discovered them last week.

My conclusion: This is a preserving method I can heartily recommend. No jars, no boiling, no nuthin’. Really, it’s even easier than giving them away.

Last week, I thawed mine over the sink, the skin came off in a single sheet. Then I squished them into a tomato sauce where they worked just fine and added a touch of freshness and the spirit of summer.
