Girl Scout Cookie Recipe Contest, second place recipe

Lara Morris of Chesapeake sent in this recipe. It placed second in our Girl Scout Cookie Recipe Contest:

TAGALONG CHEESECAKE CUPCAKES
-21 Tagalongs, 15 whole & 6 coarsely chopped
-1/2 cup sugar
-2 large eggs, lightly beaten
-1/2 cup sour cream
-16 ounces cream cheese (2 packages)
-1 tsp. vanilla extract
-Pinch of salt

Preheat oven to 275 degrees. Line muffin tin with paper liners and place one whole cookies in each paper lining. In large mixing bowl, beat the cream cheese until smooth. Slowly add in the sugar until well mixed, followed by vanilla. Slowly drizzle in the eggs, mixing thoroughly. Beat in the sour cream and salt. Stir in the chopped cookies by hand.

Fill each cookie filled cup almost to the top. There may be some leftover. Bake for 22 minutes or until filling is set. Transfer to wire rack to cool completely and refrigerate at least 4 hours before serving.
