Share your best recipe using Girl Scout Cookies, and win two tickets to the Somoa Soiree -a creative black-tie event held Feb. 17 and featuring local chefs creating Girl Scout Cookie desserts and appetizers at The Westin Virginia Beach Town Center - or a box of each type of Girl Scout Cookie. In a way, our contest is an amateur, sans-black-tie version of the soiree.
Selection: On Feb. 3, we selected three recipes based on the number of "thumbs up" it received in the comments as well as as our judges' taste. Our judges took the top three recipes, made them and tasted them along with seven tasters. The best tasting of the three won the contest!

Peppermint Chip Cheesecake Recipe
Ingredients
1 package (10 ounces) chocolate-covered mint cookies, crushed
3 tablespoons butter, melted
FILLING:
3 packages (8 ounces each) cream cheese, softened
3/4 cup sugar
5 teaspoons cornstarch
3 to 4 drops green food coloring, optional
3 eggs, lightly beaten
1 egg yolk, lightly beaten
1/2 cup heavy whipping cream
2 teaspoons peppermint extract
1-1/4 teaspoons vanilla extract
1 cup miniature semisweet chocolate chips
3 to 4 drops green food coloring, optional
Samoa Eclair
Layered dessert with graham crackers, crushed samoas, and a pudding mixture made with instant pudding, sour cream, cool whip. Topped with chocolate icing and more crushed samoas.
Thin Mint Cake Balls
Place a package of thin mints in the food processor.
Process until finely chopped.
Add one package of room-temperature cream cheese.
Process until well combined
Scoop a Tablespoon at a time and roll into balls
Place on cookie sheet and place in freezer for an hour (this step can be skipped if you are in a rush, it just makes it a little easier to handle)
Now you can dip the balls in any kind of chocolate. I like to use a good quality chocolate, such a Ghirardelli.
Then sprinkle with toppings to decorate. I like to use green sanding sugar.
These are easy enough that my 5 year-old Daisy helps me.

Tagalong Cheesecake Cupcakes
For the peanut butter, chocolate and cheesecake lover:
Place a whole Tagalong (those are the chocolate covered cookies with peanut butter on the inside) into the bottom of each cupcake liner, then pour on top of each one your cheesecake filling that has crushed Tagalongs mixed into it. Bake, chill, & enjoy! The cheesecake mixture is delicious and the tagalong at the bottom is a sweet surprise!

A rendition of a Paula Deen recipe, this very simple cookie has 4 ingredients - refrigerated sugar cookie dough, Thin Mints, an egg and Heath toffee bits. Simply delicious!
Easy Mint Chocolate Chip Ice Cream Cake
Crush a roll of Thin Mints coarsely and spread on bottom of 11x9 pan. Cut open a half-gallon container of mint chip ice cream and layer on top of the cookies. Layer whole Thin Mints on top and freeze. Voila! It's DELICIOUS.
